Wine Pairings for Anson Mills Grain Dinner Announced

Each course of our Grain Dinner tells a story. Circa 1886’s Sommelier Mark Severs has made his final selections, choosing wines that uniquely relate to each featured grain. The first course, Pigeon Pie, features White Lamas Cake Flour which was used in Pre-Revolutionary Virginia for celebratory cake baking. Severs’ wine accompaniment is a Boxwood Rose from a nearby wine region in Virginia. Expect a dry blend of Cabernet Franc, Malbec and Merlot in a traditional Bordeaux style – the perfect start to an evening of time travel through Southern food and wine.

Course One – Pigeon Pie with Virginia Ham, American Blue Potatoes, Mire Poix, Whipped White Truffle Honey, Bee Pollen

Course Two – Sage Infused Goetta with Burgundy Braised Cabbage, Gherkin, Hard Egg, Dijon Mornay, Smoked Paprika Powder

Paired with Willm Pinot Blanc from Alsace, France

Course Three – Buckwheat “Beggars Purse” with Crab n’ Shrimp Newburg, Orange Leather, Asparagus Puree, Mepkin Abbey Mushrooms, Espelette Tomato Dust

Featured Grain – Rustic Aromatic Buckwheat

Paired with Louis Latour Pouilly Fuisse from Maconnais, France

Course Four – Braised Beef Short Ribs with Fried Antebellum Grits, Golden Beets, Blue Corn Grits Sauce, Pearl Onions, Yogurt Horseradish Espuma, Chive Oil

Featured Grains- Native Fine Whole Grist Blue Corn Grits and Antebellum Coarse Yellow Grits

Paired with Bonny Doon “Le Pousseur” Syrah from Central Coast, California

Course Five – Deconstructed Chocolate Stout with Barley Brown Butter Cake, Chocolate Malt Ice Cream, Hop Salt Caramel
