The Perfect Summer Dessert

Circa-1886-Peach-SouffleOur Pastry Chef, Scott Lovorn, is a master at his craft and is known for creating the most mouthwatering desserts. The one dessert you can always count on Circa 1886 having on the menu is a light, airy soufflé. From rich chocolaty flavors, to refreshing seasonal fruits, the soufflé is a delicious light dessert, and the perfect end to your evening with us at Circa 1886.   Talking with Scott, it's easy to see why classic southern fruits are frequently highlighted on his dessert menu. Peach season in South Carolina only lasts for two months, and it's currently at its peak. This summer, in celebration of the iconic southern fruit, Scott is featuring a Peaches N' Cream Soufflé on the seasonal menu.   The Peaches N' Cream Soufflé is made with a fresh peach puree and Absolut Peach Vodka. In the baking process, the alcohol cooks out which creates a flavor reminiscent of Peach O's candy. While the original soufflé recipe was made with Gran Marnier, Scott changes the alcohol in his recipe to match the flavor profile he is looking for. The candied peach flavor is then toned down with a creamy, rich crème anglaise that is served alongside the dessert. Guests perforate the pillowy soufflé and pour the creme anglaise on top. To make this delicious dessert even more decadent, Scott pairs the soufflé with a Dulche de Leche ice cream that adds a caramelly, cobbler crumble flavor to the dessert.
